Oven-fried Chinese Chicken Wings

These buttermilk-marinated wings are accented with rich Chinese flavourings for a fusion-inspired appetizer that will intrigue your taste buds.

Ingredients

  • OVEN-FRIED CHINESE CHICKEN WINGS:
  • 1 cup (250 mL) buttermilk
  • 2 tbsp (30 mL) soy sauce
  • 2 tbsp (30 mL) sesame oil
  • 1 tbsp (15 mL) brown sugar
  • 3 cloves garlic, minced
  • 2 lb (1 kg) split chicken wings
  • 1 3/4 cups (425 mL) all-purpose flour
  • 1/4 cup (60 mL) cornstarch
  • 1 tsp (5 mL) Chinese 5-spice powder
  • 1 tsp (5 mL) each salt and pepper
  • YOGURT RANCH SAUCE:
  • 1 cup (250 mL) plain 2% Greek yogurt
  • 2 tbsp (30 mL) finely chopped parsley
  • 1 tbsp (15 mL) each finely chopped chives and dill
  • 2 tsp (10 mL) lemon juice
  • 1 tsp (5 mL) Dijon mustard
  • 1 tsp (5 mL) honey
  • 1 clove garlic, minced
  • 1/2 tsp (2 mL) each salt and pepper
  • BBQ HOISIN SAUCE:
  • 1/3 cup (75 mL) hoisin sauce
  • 1/4 cup (60 mL) barbecue sauce
  • 1/4 cup (60 mL) hot sauce
  • 1 tbsp (15 mL) melted butter
  • 1 tbsp (15 mL) soy sauce
  • 1 tbsp (15 mL) brown sugar
  • 2 tbsp (30 mL) thinly sliced green onion

Directions

  1. Oven-Fried Chinese Chicken Wings: Preheat oven to 425°F (220°C). In large bowl, stir together buttermilk, soy sauce, sesame oil, brown sugar and garlic; toss chicken wings with buttermilk mixture. Cover and marinate for at least 6 or up to 8 hours in fridge. 
  2. Stir together flour, cornstarch, 5-spice powder, salt and pepper. Remove wings from marinade, shaking off any excess marinade; discard marinade. Dredge wings in flour mixture until well coated. Arrange on large greased parchment paper–lined baking sheets. Bake, turning once, for 45 to 50 minutes or until golden brown and cooked through. 
  3. Yogurt Ranch Sauce: Stir together yogurt, parsley, chives, dill, lemon juice, mustard, honey, garlic, salt and pepper.
  4. BBQ Hoisin Sauce: Stir together hoisin sauce, barbecue sauce, hot sauce, butter, soy sauce and brown sugar. 
  5. Serve wings with Yogurt Ranch and BBQ Hoisin sauces for dipping. Sprinkle with green onions.

Tips

  • To reduce clean-up time, shake chicken wings in flour coating in a large, clean paper bag.
  • Serve chicken wings with veggie sticks if desired.
