Bannock is one of my favourite things to eat.  It has been adapted by First Nations people and become a traditional food that's far more versatile than many people may realize.  More than just a side or bread, it can be part of an entree.  Add a scoop of chili and some shredded cheese and you have a “taco”; slice it and use it as a bun for a hot dog or hamburger.  I love making bannock for dinner and adding pizza toppings.  

Bannock can be time-consuming to make, so I always make a big batch to have leftovers as a snack.  It makes a great breakfast, plain or with jam! 

My favourite way to use bannock is in this traditionally inspired dish called Bannock Benedict. It's a great way to start your day. Enjoy!
