Ingredients

  • 1 cup (226 g) unsalted Canadian butter, room temperature
  • 1 cup (200 g) granulated sugar
  • 1 large egg
  • 2 tsp (10 g) vanilla extract
  • 3½ cups (420 g) all-purpose flour
  • ¼ tsp (1 g) baking powder
  • ¾ tsp (4 g) fine salt

Directions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix the butter and sugar until smooth. Add the egg and vanilla and mix until combined.
  3. In a separate bowl, whisk together the flour, salt and baking powder.
  4. Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.
  5. Roll the dough between two sheets of parchment paper to ¼-inch thickness.
  6. Refrigerate for at least 1 hour, or until firm.
  7. Cut the dough into stars, Christmas trees or other desired shapes using sharp cookie cutters. Press straight down without twisting.
  8. Remove the excess dough and transfer the cookies to a cool, parchment-lined baking sheet. For sharper edges, freeze the cut cookies for 10–15 minutes before baking.
  9. Bake for 9–12 minutes, until the cookies are set and the edges are just beginning to turn golden.
  10. Let the cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
