1 tbsp thyme, (3 g), minced
Garnish:
2 tbsp (4 g) fresh parsley, chopped

Mashed Potatoes:
6 medium yellow potatoes, peeled and quartered
1/2 cup (125 mL) Canadian 2% milk
1/4 cup (60 mL) Canadian half and half cream
2 tbsp (30 mL) Canadian unsalted
butter, melted
1 tbsp (2g) parsley, chopped
Directions
Meatballs: In a large bowl, combine all meatball ingredients, except the butter. Divide the mixture equally and form 24 meatballs.
In a pan over medium heat, melt the butter, then add the meatballs and cook until golden on all sides and the internal temperature reaches 160°F (70°C).
Remove the meatballs from the pan and set aside.
Sauce: In the same pan, melt butter. Add mushrooms and onions and sauté until translucent. Add flour and cook for 1 minute. Reduce heat and slowly add milk, stirring
constantly until fully incorporated. Increase heat to medium, return the meatballs to the pan, and continue to simmer until the sauce thickens and coats the back of a
spoon, stirring frequently. Add the parmesan cheese and thyme and continue to simmer for 5 minutes. Set aside.
Mashed Potatoes: In a pot, boil the potatoes for 25 minutes or until they are fork-tender.
Strain the potatoes and return them to the pot. Mash the potatoes.
Add the milk, cream and butter mixture to the potatoes and continue to mash until smooth. Stir in the parsley.
This all in one meal features tender chicken breast, veggies tossed in a Mediterranean sauce then topped with bocconcini and ricotta. Everything cooks on a single baking tray making this an easy and quick meal idea.
When it comes to fresh gnocchi, adding cottage cheese to the dough helps to create that light, pillowy texture. Plus, it’s an easy and delicious way to incorporate extra protein.
This easy, one-pot soup is full of tender noodles smothered in rich marinara and cheese. Full of the classic flavours of lasagna but much easier to make with no layering required.
