Ingredients

PASTRY
1 sheet puff pastry, defrosted (225 g) cut into 6 rectangles

FILLING
1 Red Delicious apple, thinly sliced into 24 pieces
1 tbsp (15 mL) lemon juice
1 tbsp (2 g) fresh thyme (reserve desired amount for garnish)
¼ tsp (1.5 g) salt
¾ cup (170 g) Canadian mascarpone cheese
1/3 cup (80 mL) Canadian old cheddar cheese, grated
¼ cup (60 mL) fig spread, divided
1 egg yolk, whisked (to brush pastry)

Directions

  1. Pastry: Preheat the oven to 400°F (200°C). Cut the puff pastry into 6 rectangles. Use a spoon to create a well in the middle, leaving ¼-inch of pastry around the edges. Use a fork to poke holes in the centre of the well to help it bake evenly.
  2. Filling: In a bowl, combine apple slices with lemon juice, thyme and salt. Set aside.
  3. Spread 2 tablespoons of the mascarpone cheese onto the puff pastry, keeping ¼-inch away from the edge.
  4. Divide the cheddar cheese evenly between the puff pastry rectangles, then top with 4 slices of apples. Spread ½ tablespoon of fig spread over apples.
  5. Brush the edges of tarts with egg yolk. Bake for 20 minutes.
  6. Garnish: Remove from the oven and garnish with fresh thyme
