Ingredients

  • 2 cups (500 mL) Canadian Cheddar cheese
  • 1 cup (250 mL) Canadian cottage cheese
  • 1 cup (49 g) fresh spinach, chopped
  • 6 slices (91 g) bacon, cooked and chopped
  • 1 cup (250 mL) red pepper, chopped
  • 1/2 cup (125 mL) green onions, chopped
  • 1/2 cup (125 mL) jalapeños, chopped (optional)
  • 6 large eggs, whisked
  • Salt and pepper to taste

 

 

Directions

  1. Preheat the oven to 375°F (190 °C).
  2. In a large bowl, stir together all the ingredients. Divide the mixture evenly into a 12-cup silicone muffin pan.
  3. Place the muffin pan into a deep baking dish and fill with water until it reaches just below the rim of the muffin pan.
  4. Place it on the middle rack of the oven.
  5. Bake for 20 minutes or until the egg bites reach your desired consistency.
