Creamy Green Goddess Power Bowl with Crispy Halloumi

These high-protein power bowls are topped with crispy halloumi and a creamy Greek yogurt dressing for a satisfying, flavour-packed meal. Recipe by @Lindsay.Pleskot.Rd

Equipment

 

  • Medium saucepan (for cooking quinoa, if not prepared ahead)
  • Non-stick skillet or frying pan
  • Blender or food processor

 

 

Ingredients

For the bowls

  • 2 cups quinoa, cooked 
  • 2 cup shelled edamame  
  • 2 cups mini cucumbers (about 3 cucumbers), cut into half-rounds  
  • 3 cups spinach, loosely packed 
  • 200g local  halloumi, cubed  

For the Green Goddess Dressing

  • 1 cup fresh spinach 
  • 1/3 cup BC plain Greek yogurt 
  • ¼ cup olive oil 
  • 2 Tbsp fresh basil 
  • 1 Tbsp fresh dill 
  • 1 Tbsp fresh chives 
  • 1 garlic clove 
  • Juice of ¼ lemon 
  • Salt and pepper to taste 

Directions

  1. Cook quinoa according to package directions and let cool slightly. 
  2. Pan-fry halloumi slices over medium-high heat for about 2 minutes per side until golden and slightly crisp. 
  3. Add all dressing ingredients to a blender or food processor and blend until smooth and creamy. Adjust to taste with more salt or lemon if desired 
  4. To assemble, start with the dressing on the bottom if you don’t have a divided jar like these. Then divide the quinoa, edamame, cucumber, spinach, and halloumi evenly among the jars. Store bowls in the fridge for up to 4 days.

Tips

Double the dressing for a creamy and protein packed veggie dip and sandwich spread. It is so versatile!
