Papaya Salad
The papaya seed dressing takes this salad from ordinary to extraordinary!

Equipment
- Salad spinner
- Chopping knife
- Cutting board
- Measuring spoons
- Measuring cup
- Vegetable peeler
- Spoon
- Salad bowl and salad spoons
- Blender or food processor
- Rubber spatula
Ingredients
- 1 head romaine lettuce
- 1 papaya
- 1 large avocado
- DRESSING
- 3 Tbsp (45 mL) sugar
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) dry mustard
- 1/4 cup (60 mL) vinegar
- 1/4 cup (60 mL) vegetable oil
- 2 Tbsp (30 mL) chopped onion
- 2 Tbsp (30 mL) papaya seeds
Instructions
- Wash lettuce. Tear into small pieces and place in salad spinner. Spin to dry and put in salad bowl.
- Peel papaya with vegetable peeler. Cut papaya in half and scoop out seeds. Reserve 2 Tbsp seeds for dressing.
- Slice papaya into chunks and add to salad bowl.
- Peel and slice avocado and add to salad bowl.
- Make dressing by placing sugar, salt, dry mustard, vinegar, oil, chopped onion and papaya seeds into blender or food processor. Blend until smooth. Papaya seeds will look like coarse pepper.
- Drizzle about half of the dressing over the salad and serve the remainder of the dressing on the side.
