One Pot HK Style Cheesy Pork Chop Rice

Ingredients

  • 1 can classic tomato soup
  • ½ cup water
  • 2 tomatoes, chopped
  • 2 pork loin chops, sliced into strips
  • ½ onion, sliced
  • 1 tsp salt (adjust to taste)
  • 1 tsp white pepper (adjust to taste)
  • 1 cup 100% Canadian cheese (mozzarella and cheddar mix recommended)
  • 1 cup cooked white rice (day-old or reheated works best)

Directions

  1. Tenderize and Slice the Pork:Using the back of a knife, lightly hammer the pork chops to tenderize, then slice into ½ inch strips.
  2. Prepare the Mixture in the Rice Cooker: In the rice cooker pot, add the tomato soup, chopped tomatoes, sliced onion, water, and pork chop strips. Stir to combine.
  3. Cook: Set the rice cooker to the “white rice” setting and cook for 20 minutes. Once done, open the lid, stir everything well, and mash the tomatoes into the sauce.
  4. Season: Add salt and white pepper to taste. Stir to combine.
  5. Melt the Cheese: Sprinkle cheese over the top of the mixture, close the lid, and cook for another 3-4 minutes until the cheese is melted and bubbly.
  6. Serve:Reheat your pre-cooked white rice and serve the cheesy pork chop mixture on top. Enjoy the cheesy goodness!
