Ingredients
1 head romaine lettuce
1 papaya
1 large avocado
DRESSING
3 Tbsp (45 mL) sugar
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) dry mustard
1/4 cup (60 mL) vinegar
1/4 cup (60 mL) vegetable oil
2 Tbsp (30 mL) chopped onion
2 Tbsp (30 mL) papaya seeds
Directions
Wash lettuce. Tear into small pieces and place in salad spinner. Spin to dry and put in salad bowl.
Peel papaya with vegetable peeler. Cut papaya in half and scoop out seeds. Reserve 2 Tbsp seeds for dressing.
Slice papaya into chunks and add to salad bowl.
Peel and slice avocado and add to salad bowl.
Make dressing by placing sugar, salt, dry mustard, vinegar, oil, chopped onion and papaya seeds into blender or food processor. Blend until smooth. Papaya seeds will look like coarse pepper.
Drizzle about half of the dressing over the salad and serve the remainder of the dressing on the side.
