Strawberry cottage cheese ice cream

This satisfying dessert is packed with protein has a wonderful velvety texture. You can even substitute any frozen fruit in place of strawberries.

Equipment

  • high speed blender or food processor
  • silicon or rubber spatula
  • loaf pan
  • Measuring cups and spoons

Ingredients

  • 2 cups (480ml) 4% cottage cheese
  • 1 cup (240ml)  frozen strawberries
  • 2 bananas cut into chunks
  • 3 tbsp (45ml) liquid honey or agave syrup

Directions

  1. Place cottage cheese, honey and bananas into a high speed blender and blend until combined, add the strawberries and continue to blend until smooth.
  2. Transfer to a loaf pan and freeze for 2-3 hours.
  3. Before serving, allow ice cream to sit at room temperature for 5-10 minutes before scooping.

Tips

If using a food processor, be sure to stir the mixture a couple times during the freezing process to prevent formation of ice crystals.
