Ingredients
2 cups full fat vanilla yogurt (I used 9% for an extra creamy texture)
2 cups fresh strawberries, plus more for topping
3 mini sponge cakes, roughly chopped
Whipped cream (for topping)
Directions
In a small bowl, mash the strawberries until a chunky paste forms.
Divide the strawberries into 4 small jars or glass cups.
Add the sponge cake pieces on top of the mashed berries, pressing down slightly so they soak up the juices.
Spoon the yogurt over the shortcake layer, smoothing the top.
Top each cup with whipped cream and more whole or cut up strawberries
Enjoy immediately, or let them sit in the fridge for 30 minutes or overnight to allow the shortcake to soften, and the yogurt to thicken.
