Asparagus and Chive Cream Omelette

Asparagus is currently in-season in BC, so we thought it would be a good time to try this great recipe from Buy Local. Eat Natural.



    • 1/2 cup (125 mL) cooking cream
    • 1/4 cup 60 mL snipped chives
    • 2 or 3 eggs, beaten
    • 1 Tbsp (15 mL) butter
    • 3 slices smoked salmon
    • 5 fresh asparagus stalks, blanced
    • 3 thin slices 100% Canadian Old Cheddar Cheese
    • Salt and pepper to taste


    In a bowl, whip cream until soft peaks form. Fold in chives and set aside. In a frying pan, melt butter and cook eggs until almost set. In centre of omelette, place salmon, asparagus and cheese. Fold in each side of omelette and slide onto a plate. Salt and pepper to taste. Top with a dollop of chive cream.
