Dilute ¾ cup granulated sugar with ¾ cup boiling water. Set aside to cool. Store in a jar with a lid until ready to use.
Mix 2 tbsp matcha powder with ½ cups boiling water, froth with a matcha tea whisk or small whisk. Set aside.
In a martini shaker, combine ½ cups ice, 2 cups whole milk, ½ cup matcha green tea mix (from above), 2 tbsp simple syrup or sweetener of choice. Shake vigorously.
Prepare your glasses by filling each with ½ cup of tapioca pearls (if using)
Pour your matcha drink over top of the pearls and enjoy!
